Classic Zero-Point White Chicken Chili
Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 14 oz canned pinto beans, drained and rinsed
- 14 oz canned white beans, drained and rinsed
- 14 oz canned corn, drained and rinsed
- 16 oz green salsa (salsa verde)
- 4 cups fat-free chicken broth
Instructions:
- Place all ingredients except the chicken in a slow cooker and stir to combine.
- Add the chicken breasts on top.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- Remove the chicken, shred it, and return it to the chili.
- Stir well and serve.
