Zero Point Turkey Chili (Weight Watchers Friendly)
Ingredients
- 1.5 lbs lean ground turkey (99% fat-free)
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 (14.5 oz) cans diced tomatoes (no salt added)
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 cup low-sodium chicken broth
- 2 tbsp tomato paste
- Spice Blend:
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper to taste

- Fresh cilantro, chopped
- Diced green onions
- Lime wedges
Equipment
- Large Dutch oven or heavy-bottomed pot

Instructions
- Prep Work
- Dice onions and bell peppers
- Mince garlic
- Measure out all spices
- Brown the Turkey
- Heat a large pot over medium-high heat
- Add ground turkey
- Cook, breaking apart with a wooden spoon
- Cook until no longer pink (about 5-7 minutes)
- No need to add oil – use non-stick pot or spray
- Sauté Vegetables
- Add diced onions and bell peppers
- Cook for 3-4 minutes until slightly softened
- Add minced garlic
- Cook for additional 30 seconds
- Build the Chili
- Add all spices to the pot
- Stir and cook for 1 minute to bloom spices
- Add tomato paste
- Stir and cook for 1 minute
- Combine Ingredients
- Add diced tomatoes
- Add rinsed black and kidney beans
- Pour in chicken broth
- Stir to combine
- Simmer
- Bring to a gentle boil
- Reduce heat to low
- Cover and simmer for 30-40 minutes
- Stir occasionally
- Chili will thicken as it cooks
- Final Touches
- Taste and adjust seasoning
- Add salt and pepper as needed
- Let sit for 10 minutes before serving
