Ingredients

  • 4 large bell peppers, tops sliced off and seeds removed
  • 1 lb lean ground turkey (or beef)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup cooked brown rice (optional)
  • 1 can (14 oz) diced tomatoes, drained
  • ½ cup black beans, rinsed and drained
  • ½ cup corn kernels
  • ½ cup shredded reduced-fat cheddar cheese
  • ¼ cup chopped fresh cilantro
  • Salt and pepper to taste
  • Non-stick cooking spray or 1 tsp olive oil for skillet

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a baking dish with non-stick spray.
  2. Cut tops off peppers and remove seeds. Place peppers upright in the prepared dish.
  3. Heat spray or oil in a skillet over medium heat. Add ground turkey and cook until no longer pink, about 5–7 minutes.
  4. Stir in taco seasoning, cooked rice, tomatoes, black beans, and corn. Cook for 2–3 minutes until heated through. Season with salt and pepper.
  5. Spoon the mixture evenly into each pepper. Cover with foil and bake for 25–30 minutes.
  6. Remove foil, sprinkle with cheese, and bake uncovered for an additional 5 minutes until cheese melts.
  7. Garnish with cilantro and serve hot.
