Lighter King Ranch Casserole

Ingredients

  • 2 cups shredded chicken breast (skinless)
  • 1 can (10 oz) low-fat cream of chicken soup
  • 1 can (10 oz) low-fat cream of mushroom soup
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup low-fat sour cream
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup reduced-fat shredded cheddar cheese
  • 8 corn tortillas, cut into strips
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Preparation Instructions

Preparation:

  1. Preheat oven to 350°F (175°C)
  2. Spray 9×13 inch baking dish with non-stick cooking spray

Mixing:

  1. In large mixing bowl, combine:
    • Shredded chicken
    • Low-fat cream soups
    • Greek yogurt
    • Sour cream
    • Diced tomatoes
    • Chopped onion
    • Bell pepper
    • Spices
  2. Mix thoroughly until well combined

Layering:

  1. Layer half the tortilla strips on bottom of baking dish
  2. Spread half the chicken mixture over tortillas
  3. Sprinkle half the cheese
  4. Repeat layers

Baking:

  1. Cover with foil
  2. Bake for 25 minutes
  3. Remove foil
  4. Bake additional 10-15 minutes until cheese melts
  5. Let stand 5 minutes before serving
