Zesty Light Pound Cake

Ingredients

Cake:

  • 1½ cups all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 cup sugar substitute
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsweetened applesauce
  • ¼ cup light olive oil
  • 3 large egg whites
  • ½ cup non-fat Greek yogurt
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract

Glaze:

  • ½ cup powdered sugar substitute
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest

Preparation

Cake:

  1. Preheat oven to 350°F (175°C)
  2. Spray a 9×5 inch loaf pan with non-stick spray
  3. In a large bowl, whisk together:
    • All-purpose flour
    • Whole wheat pastry flour
    • Sugar substitute
    • Baking powder
    • Baking soda
    • Salt
  4. In separate bowl, mix:
    • Applesauce
    • Olive oil
    • Egg whites
    • Greek yogurt
    • Lemon zest
    • Lemon juice
    • Vanilla extract
  5. Combine wet and dry ingredients
  6. Pour batter into prepared pan
  7. Bake 45-50 minutes
  8. Cool completely

Glaze:

  1. Whisk sugar substitute
  2. Add lemon juice and zest
  3. Drizzle over cooled cake
