Instructions
- Prepare

- In a separate bowl, mix:

- Lemon zest
- Vanilla extract
- Whisk until smooth and well combined
- In a separate bowl, mix:
- Create Batter
- Gradually add wet ingredients to dry ingredients
- Stir until just combined
- Do not overmix – some small lumps are okay
- Bake
- Divide batter evenly among 12 muffin cups
- Fill each cup about 2/3 full
- Bake for 18-22 minutes
- Test with a toothpick – it should come out clean
- Cool and Finish
- Let muffins cool in pan for 5 minutes
- Transfer to a wire rack
- Optional: Dust with powdered zero-calorie sweetener
- Cool completely before serving
