Weight Watchers Goulash

Here’s a lighter version of traditional goulash that’s Weight Watchers friendly while still being hearty and satisfying:

Ingredients:

  • 1 pound extra lean ground turkey (99% fat-free)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 1 can (8 oz) tomato sauce, no salt added
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon paprika (preferably Hungarian)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon caraway seeds (optional, for authentic flavor)
  • 1/4 teaspoon black pepper
  • 2 cups reduced-sodium beef broth
  • 2 cups whole wheat elbow macaroni, uncooked
  • Salt to taste (if needed)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Spray a large pot or Dutch oven with cooking spray and heat over medium heat.
  2. Add the ground turkey and cook until no longer pink, breaking it up as it cooks (about 5-7 minutes).
  3. Add the onion, garlic, and bell pepper to the pot and cook for about 3-4 minutes until vegetables begin to soften.
  4. Stir in the paprika, oregano, basil, caraway seeds (if using), and black pepper. Cook for 30 seconds until fragrant.
  5. Add the diced tomatoes, tomato sauce, tomato paste, Worcestershire sauce, and beef broth. Stir well to combine.
  6. Bring the mixture to a boil, then add the uncooked macaroni.
  7. Reduce heat to low, cover, and simmer for about 15-18 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.
  8. Taste and adjust seasoning if necessary.
  9. Garnish with fresh parsley before serving.

This recipe makes approximately 6 servings. Points will vary based on your specific WW plan and any modifications:

  • Approximately 5-7 points per serving on the Blue Plan
  • Using whole wheat pasta instead of regular adds fiber while keeping points similar
  • For fewer points, you can reduce the pasta amount to 1.5 cups
