Here’s a lightened-up version of the classic Doritos taco salad that’s Weight Watchers friendly while still delivering that satisfying crunch and flavor:

Ingredients:

  • 1 pound lean ground turkey (93% lean)
  • 1 packet reduced-sodium taco seasoning
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh or frozen, thawed)
  • 1/4 cup red onion, finely diced
  • 1/4 cup reduced-fat shredded cheddar cheese
  • 1 small avocado, diced (optional, adds points)
  • 2 tablespoons sliced black olives (optional)
  • 2 ounces baked Doritos (about 20-25 chips), lightly crushed
  • 1/4 cup fat-free Greek yogurt (as sour cream substitute)
  • 1/4 cup salsa
  • 2 tablespoons chopped fresh cilantro

Instructions:

  1. In a large skillet over medium heat, cook the ground turkey until no longer pink, breaking it up as it cooks (about 5-7 minutes).
  2. Add the taco seasoning and 1/4 cup water. Simmer for 2-3 minutes until slightly thickened.
  3. Allow the meat to cool slightly while preparing the other ingredients.
  4. In a large bowl, combine the chopped romaine, tomatoes, black beans, corn, red onion, and cheese.
  5. In a small bowl, mix the Greek yogurt and salsa to create a lighter dressing.
  6. Add the cooled meat to the salad mixture.
  7. Just before serving, gently fold in the crushed Doritos, drizzle with the yogurt-salsa dressing, and top with cilantro.
  8. If using avocado and olives, add these just before serving as well.
