  • Fat: High in healthy fats for keto

  • Protein: Moderate from cream and broth

  • No thickeners, no flour, no starch

Preparation Method

  1.  Prep the Mushrooms
Wipe mushrooms clean with a damp towel and slice them thinly. Set aside.
  2.  Sauté the Base
Heat butter and olive oil in a large pot over medium heat. Add onions and cook until soft and translucent (about 3–4 minutes). Add garlic and cook another 30 seconds.
  3.  Cook the Mushrooms
Add sliced mushrooms and season with salt, pepper, and thyme. Cook until mushrooms release their moisture and start to brown (about 8–10 minutes).
  4.  Add Broth & Simmer
Pour in the broth. Bring to a boil, then lower heat and simmer for 10 minutes to let flavors combine.
  5.  Blend the Soup (Optional for creamy texture)
Use an immersion blender to partially or fully blend the soup to your preferred texture. You can also transfer half to a blender and return to the pot.
  6.  Add the Cream & Cheese
Stir in heavy cream and cream cheese. Let it simmer gently for 5–7 minutes until fully creamy and heated through. Do not boil.
  7.  Taste & Finish
Adjust salt and pepper. Garnish with parsley or chives before serving.

Pro Tips

  • Richer Texture? Add an extra tablespoon of butter or a spoon of sour cream.

  • Chunky Version? Skip blending and enjoy the soup with full mushroom slices.

  • Extra Herbs? Fresh thyme or rosemary adds depth and aroma
