Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese, divided
  • ½ cup sour cream
  • ½ cup heavy cream
  • 3 green onions, sliced (divided)
  • 1 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. In a large pot, cook bacon over medium heat until crisp. Remove, crumble, and set aside. Reserve 1 tbsp bacon fat.
  2. Add butter, onion, and garlic to the pot. Sauté until fragrant, about 2–3 minutes.
  3. Stir in cauliflower florets and chicken broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes until cauliflower is tender.
  4. Using an immersion blender, puree the soup until smooth. (Alternatively, transfer to a blender in batches.)
  5. Return soup to low heat. Stir in heavy cream, sour cream, and half of the cheddar cheese. Season with salt and pepper.
  6. When cheese is melted and soup is heated through, ladle into bowls.
  7. Top with remaining cheddar, crumbled bacon, and sliced green onions.
  8. Serve immediately and enjoy!
