Keto Cinnamon Rolls

Ingredients:

For the Dough:

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 2 tablespoons granulated sweetener (e.g., allulose)
  • 3 cups shredded low-moisture mozzarella cheese
  • 2 ounces cream cheese
  • 2 large eggs

For the Filling:

  • 1/4 cup melted butter
  • 1/3 cup brown sugar substitute
  • 1 tablespoon ground cinnamon​

 

For the Frosting:

  • 4 ounces cream cheese
  • 1/2 cup softened butter
  • 2 cups powdered sugar substitute
  • 1–2 tablespoons milk (as needed for consistency)​

 

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a 9×13-inch baking dish with parchment paper.
  2. Prepare the Dough: In a bowl, whisk together almond flour, baking powder, and sweetener. In a microwave-safe bowl, combine mozzarella and cream cheese; microwave in 20-second intervals until melted and smooth. Combine the melted cheeses with the dry ingredients and eggs in a food processor; blend until a dough forms.
  3. Roll Out the Dough: Place the dough between two sheets of parchment paper and roll into a rectangle.
  4. Add Filling: Brush the dough with melted butter, then sprinkle with the brown sugar substitute and cinnamon.
  5. Form Rolls: Roll the dough into a log and slice into 12 equal pieces. Place them in the prepared baking dish.
  6. Bake: Bake for 20 minutes or until golden and cooked through.
  7. Prepare Frosting: While the rolls bake, mix cream cheese, butter, and powdered sweetener until smooth. Add milk as needed to achieve desired consistency.
  8. Frost and Serve: Once rolls are slightly cooled, spread frosting over the top and enjoy!​
  9. Each roll contains approximately 2 grams of net carbs.
