Keto Cinnamon Rolls
Ingredients:
For the Dough:
- 2 cups almond flour
- 1 tablespoon baking powder
- 2 tablespoons granulated sweetener (e.g., allulose)
- 3 cups shredded low-moisture mozzarella cheese
- 2 ounces cream cheese
- 2 large eggs
For the Filling:
- 1/4 cup melted butter
- 1/3 cup brown sugar substitute
- 1 tablespoon ground cinnamon
For the Frosting:
- 4 ounces cream cheese
- 1/2 cup softened butter
- 2 cups powdered sugar substitute
- 1–2 tablespoons milk (as needed for consistency)
Instructions:
- Preheat your oven to 350°F (180°C). Line a 9×13-inch baking dish with parchment paper.
- Prepare the Dough: In a bowl, whisk together almond flour, baking powder, and sweetener. In a microwave-safe bowl, combine mozzarella and cream cheese; microwave in 20-second intervals until melted and smooth. Combine the melted cheeses with the dry ingredients and eggs in a food processor; blend until a dough forms.
- Roll Out the Dough: Place the dough between two sheets of parchment paper and roll into a rectangle.
- Add Filling: Brush the dough with melted butter, then sprinkle with the brown sugar substitute and cinnamon.
- Form Rolls: Roll the dough into a log and slice into 12 equal pieces. Place them in the prepared baking dish.
- Bake: Bake for 20 minutes or until golden and cooked through.
- Prepare Frosting: While the rolls bake, mix cream cheese, butter, and powdered sweetener until smooth. Add milk as needed to achieve desired consistency.
- Frost and Serve: Once rolls are slightly cooled, spread frosting over the top and enjoy!
- Each roll contains approximately 2 grams of net carbs.
