Here’s a delicious keto-friendly cinnamon rolls recipe that satisfies that sweet craving without the carbs:

Ingredients:

For the Dough:

  • 2 cups shredded mozzarella cheese (low moisture, part-skim)
  • 2 oz cream cheese
  • 1¾ cups almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Filling:

  • 3 tablespoons butter, melted
  • ⅓ cup brown sugar substitute (like Swerve or Lakanto Golden)
  • 2 tablespoons ground cinnamon
  • ½ teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • ⅓ cup powdered erythritol or monk fruit sweetener
  • ¼ teaspoon vanilla extract
  • 1-2 tablespoons heavy cream (to adjust consistency)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
  3. In a separate bowl, mix almond flour, coconut flour, and baking powder.
  4. Add eggs and vanilla to the melted cheese mixture and mix quickly. Then add the dry ingredients and knead until you have a uniform dough. If the dough is too sticky, refrigerate for 15-20 minutes.
  5. Place the dough between two pieces of parchment paper and roll into a rectangle approximately 12×14 inches.
  6. For the filling, mix the melted butter with brown sugar substitute, cinnamon, and vanilla. Spread this mixture evenly over the rolled-out dough.
  7. Using the parchment paper to help, roll the dough tightly from the long side to form a log.
  8. Cut the log into 9-12 equal slices and place them on the prepared baking sheet, leaving space between each roll.
  9. Bake for 15-20 minutes until golden brown.
  10. While the rolls are baking, make the frosting by beating together cream cheese, butter, powdered sweetener, and vanilla. Add heavy cream as needed for desired consistency.
  11. Let the cinnamon rolls cool for 5 minutes, then spread the frosting over the warm rolls.

These keto cinnamon rolls have approximately 3-4g net carbs per roll (depending on size) and are perfect for a special breakfast or dessert that won’t kick you out of ketosis. They can be stored in an airtight container in the refrigerator for up to 5 days, and reheated briefly in the microwave before serving.
