Keto Air Fryer Chicken Nuggets
I’d be happy to share a recipe for keto air fryer chicken nuggets! These are delicious, low-carb, and perfect for a quick meal.
Ingredients:
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup almond flour
- 1/4 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- Avocado oil spray for the air fryer
Instructions:
- In a shallow bowl, combine the almond flour, parmesan cheese, garlic powder, paprika, onion powder, salt, and pepper.
- In a separate bowl, beat the eggs.
- Dip each piece of chicken first in the egg, then coat thoroughly in the almond flour mixture.
- Preheat your air fryer to 390°F (200°C).
- Lightly spray the air fryer basket with avocado oil.
- Place the coated chicken pieces in a single layer in the air fryer basket (you may need to cook in batches).
- Cook for 10-12 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).
- Serve with keto-friendly dipping sauce like ranch or sugar-free BBQ sauce.
These nuggets have approximately 2g net carbs per serving and are perfect for keto meal prep. You can store them in the refrigerator for up to 3 days and reheat in the air fryer for about 3-4 minutes at 350°F.
