Zero Point Turkey Chili (Weight Watchers Friendly)

Ingredients

  • 1.5 lbs lean ground turkey (99% fat-free)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 (14.5 oz) cans diced tomatoes (no salt added)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 cup low-sodium chicken broth
  • 2 tbsp tomato paste
  • Spice Blend:
    • 2 tbsp chili powder
    • 1 tbsp ground cumin
    • 1 tsp smoked paprika
    • 1 tsp dried oregano
    • 1/2 tsp cayenne pepper (optional)
    • Salt and black pepper to taste

Optional Zero-Point Toppings

  • Fresh cilantro, chopped
  • Diced green onions
  • Lime wedges

Instructions

  1. Prep Work
    • Dice onions and bell peppers
    • Mince garlic
    • Measure out all spices
  2. Brown the Turkey
    • Heat a large pot over medium-high heat
    • Add ground turkey
    • Cook, breaking apart with a wooden spoon
    • Cook until no longer pink (about 5-7 minutes)
    • No need to add oil – use non-stick pot or spray
  3. Sauté Vegetables
    • Add diced onions and bell peppers
    • Cook for 3-4 minutes until slightly softened
    • Add minced garlic
    • Cook for additional 30 seconds
  4. Build the Chili
    • Add all spices to the pot
    • Stir and cook for 1 minute to bloom spices
    • Add tomato paste
    • Stir and cook for 1 minute
  5. Combine Ingredients
    • Add diced tomatoes
    • Add rinsed black and kidney beans
    • Pour in chicken broth
    • Stir to combine
  6. Simmer
    • Bring to a gentle boil
    • Reduce heat to low
    • Cover and simmer for 30-40 minutes
    • Stir occasionally
    • Chili will thicken as it cooks
  7. Final Touches
    • Taste and adjust seasoning
    • Add salt and pepper as needed
    • Let sit for 10 minutes before serving
