Lighter King Ranch Casserole
Ingredients
- 2 cups shredded chicken breast (skinless)
- 1 can (10 oz) low-fat cream of chicken soup
- 1 can (10 oz) low-fat cream of mushroom soup
- 1/2 cup plain non-fat Greek yogurt
- 1/2 cup low-fat sour cream
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 1 cup reduced-fat shredded cheddar cheese
- 8 corn tortillas, cut into strips
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
