Weight Watchers Chicken Tikka Masala

Ingredients

  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup non-fat plain Greek yogurt
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt & pepper, to taste
  • 1 tsp olive oil
  • 1 small onion, finely chopped
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup low-fat milk (or unsweetened cashew milk)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a bowl, combine yogurt, lemon juice, garlic, ginger, garam masala, cumin, paprika, turmeric, salt, and pepper. Add chicken, toss to coat, and marinate for at least 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until lightly browned, about 5-6 minutes. Remove chicken and set aside.
  3. In the same skillet, sauté chopped onion until translucent, about 3-4 minutes.
  4. Add crushed tomatoes and remaining spices. Stir and simmer for 5 minutes.
  5. Return chicken to the skillet. Cover and cook for 8-10 minutes, until chicken is cooked through.
  6. Stir in low-fat milk and simmer for another 2 minutes until sauce is creamy.
  7. Garnish with fresh cilantro and serve hot over cauliflower rice or steamed veggies.

Frequently Asked Questions

Can I use chicken thighs instead of breasts?

Yes! Boneless, skinless chicken thighs work great and add extra flavor. Adjust cooking time if needed until the meat is cooked through.

How can I make this recipe dairy-free?

Substitute Greek yogurt with dairy-free yogurt and use unsweetened cashew or almond milk. The flavor remains just as creamy.

Can I freeze leftovers?

Absolutely. Store in an airtight container for up to 3 months. Thaw overnight in the fridge and reheat gently on the stove.

What should I serve with Chicken Tikka Masala?

This dish pairs well with steamed veggies, cauliflower rice, or whole grain naan for a low-point meal.
