Ingredients

  • 1 lb extra-lean ground beef (95% lean)
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup low-sodium beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • 4 cups cauliflower florets
  • 1/4 cup fat-free milk
  • Cooking spray
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a large skillet with cooking spray over medium-high heat. Add ground beef and cook until browned; drain excess fat.
  3. Add onion, garlic and carrots to the skillet; cook until softened, about 5 minutes.
  4. Stir in tomato paste, Worcestershire sauce, beef broth and thyme. Simmer for 5 minutes, then fold in peas. Season with salt and pepper.
  5. Meanwhile, steam cauliflower florets until tender. Mash with fat-free milk, salt and pepper until smooth.
  6. Transfer meat mixture to a 9×9-inch baking dish. Spread cauliflower mash evenly on top.
  7. Bake for 20 minutes, or until the mash is lightly golden. Let rest 5 minutes before serving.
