Instructions

  1. Season beef with salt and pepper. In a large pot, heat olive oil over medium-high heat and brown beef in batches. Remove and set aside.
  2. Add onion and garlic; sauté until fragrant, about 2 minutes.
  3. Stir in carrots and celery; cook for 3–4 minutes.
  4. Return beef to the pot. Add beef broth, diced tomatoes, Worcestershire sauce, thyme, rosemary, bay leaf, and black pepper. Bring to a boil.
