Ingredients
- 1/2 cup (120g) natural creamy peanut butter (no sugar added)
- 2 tbsp (30g) coconut oil, melted
- 2 tbsp powdered erythritol
- 1 tsp vanilla extract
- Pinch of salt
- 3 oz (85g) sugar-free dark chocolate
- 1 tsp coconut oil (for melting chocolate)
Instructions
- Line a mini muffin tin with 12 liners and set aside.
- In a bowl, mix peanut butter, melted coconut oil, erythritol, vanilla, and salt until smooth.
- Melt sugar-free chocolate and 1 tsp coconut oil in 20-second intervals, stirring until silky.
- Divide half of the melted chocolate between liners, swirling to coat the bottom. Freeze 5 minutes.
- Spoon 1 tbsp peanut butter mixture into each cup and gently flatten. Freeze 5 minutes.
- Top each with remaining chocolate, spread evenly, and freeze 15–20 minutes until set.
- Remove from liners and store in an airtight container in the fridge or freezer.
