Ingredients

  • 1/2 cup (120g) natural creamy peanut butter (no sugar added)
  • 2 tbsp (30g) coconut oil, melted
  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 oz (85g) sugar-free dark chocolate
  • 1 tsp coconut oil (for melting chocolate)

Instructions

  1. Line a mini muffin tin with 12 liners and set aside.
  2. In a bowl, mix peanut butter, melted coconut oil, erythritol, vanilla, and salt until smooth.
  3. Melt sugar-free chocolate and 1 tsp coconut oil in 20-second intervals, stirring until silky.
  4. Divide half of the melted chocolate between liners, swirling to coat the bottom. Freeze 5 minutes.
  5. Spoon 1 tbsp peanut butter mixture into each cup and gently flatten. Freeze 5 minutes.
  6. Top each with remaining chocolate, spread evenly, and freeze 15–20 minutes until set.
  7. Remove from liners and store in an airtight container in the fridge or freezer.
