Classic Zero-Point White Chicken Chili

 

Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 14 oz canned pinto beans, drained and rinsed
  • 14 oz canned white beans, drained and rinsed
  • 14 oz canned corn, drained and rinsed
  • 16 oz green salsa (salsa verde)
  • 4 cups fat-free chicken broth

 

Instructions:

  1. Place all ingredients except the chicken in a slow cooker and stir to combine.
  2. Add the chicken breasts on top.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  4. Remove the chicken, shred it, and return it to the chili.
  5. Stir well and serve.
